Yum Yum Pancake Fun

I have been away for a while and in a bit of a work rut, in which all I was doing was focussing on the state test my students were taking. Consequently, I have been missing my runs and doing poorly with my diet.


While getting back on track, I came across a delicious recipe: Pancake Muffins! They are great!

Pancake Muffins


  • 1 cup pancake mix (any will do- low fat will lower the calories)
  • 2/3 cups of fat free milk, 2% milk, soy milk (any will work- I used water)
  • 1/2 cup of sugar free syrup (I used sugar free maple syrup)
  • fruit, sausage, bacon, etc. (anything you want in the pancake muffin)


  1. Mix the pancake mix, milk, and syrup in a bowl
  2. pour batter into 12 cup muffin pan
  3. top with your choice of fruit, meat, etc.
  4. bake at 350 for approximately 10-15 minutes (different times for different ovens and pans)
  5. Enjoy! I dipped them in a side of low fat syrup.

Darn you chocolate monster!

I love chocolate and I am pretty sure I inherited it from my mother…thanks mom! While I would love to indulge in a beautifully tasting piece of chocolate cake or candy, I think I would love the feeling of overcoming this darn craving more. So, how do I overcome the temptation of the chocolate monster? I do it with a modified version of my mom’s famous and easy party favorite…a strawberry shortcake.


Diet Coke, Chocolate cake mix, Fresh Strawberries, and Fat Free Cool Whip


Mix Diet Coke and Cake Mix together: 


Pour cake batter into 2 pans and follow baking instructions: 


Ice Cake with fat-free cool whip and layer with

sliced strawberries repeat for 2nd cake square:


Enjoy and fix that craving!
